Ιn this issue, Estiator takes a close look at an exciting fast-casual bakery-café concept that’s made in Greece and poised for great things here in the United States. With a founder whose pedigree in large-scale concepts is impressive, and a vision to bring authentic, high-quality Greek baked goods and foods to an American public enamored with “all flavors Greek,” Greek From Greece (GFG) is an impressive story, and one that’s just beginning.

If starting your day at midnight sounds like a hard-knock life, then our story on “Mama Jo” Despas, a legendary breakfast cart operator in Manhattan, is sure to inspire you.

But the most important news won’t be found in this issue of Estiator. As we go to press, the country is coming to grips with the coronavirus pandemic that is spreading across the globe.

From our vantage point in New York and the tri-state area, things look bleak as restaurants are shuttered by government mandate and the public is urged to limit their interactions out of the home. Other areas of the country are suffering the same fate, and it’s likely that still others are to follow.

 When we come out of this, it will be a different world with new realities and new challenges.

Hopefully, the government will bail out the small businesses that are the backbone of the economy, but this all remains to be seen.

 And so, in this letter, the publisher, editors, and staff at Estiator are praying that our readers can adapt quickly to keep their businesses afloat and to come out on the other end of this intact. Hopefully, you’ve found some insights in the these pages over the past months and years that will help you to navigate through it.
