Moms and May

As this issue hits your mailbox, you’ll all be scrambling with last-minute preparations for Mother’s Day, the busiest day of the year for many restaurants. While we toil away the day, tending to the moms of friends, acquaintances, and even first-time customers, it’s important to pause and recognize the thousands of moms in our lives who do so much to make our businesses successful. And so, we tip our hats to all the moms of restaurant families out there! The ones who work in the industry have had to balance family and business, rarely making time for themselves. The moms who have supported the business by surrendering their spouses to the restaurant beast have had to bear the brunt of the child- rearing as veritable single parents. We recognize the sacrifices you have made with selfless grace; keeping the wheels in motion for family, staff, and friends on this bus that we call “life.” You are our pillars and our strength, and you all deserve our undying gratitude. Thank you!

And now to our current issue… For our cover story, senior contributor Michael Kaminer ventures out west, where he meets up with restaurateur Charlies Bililies, who with his nine Souvla restaurants has carved out a place for Greek cuisine in the niche space that combines fast casual with fine dining (“fine casual,” as he calls it) in “San Francisco Success Story.” On the opposite coast, Kaminer takes a drive a few hours north of New York City, where he pays a visit to Mazi, an upstate Greek concept, for this month’s Restaurant Spotlight.

If all this talk about Greek food hasn’t made you hungry yet, then venture to our Greek-language pages, where Athens correspondent Gina Kallitsi heads to Thessaloniki, Greece’s beautiful second capital, to dine out at To Manitari (The Mushroom), a multi-awarded eatery at the forefront of the neo-Hellenic cuisine movement. Also in our Greek pages is a visit to the Karavas Bakery, whose goods are marketed through much of Greece.

Finally, in this month’s Managing for Success, senior editor Constantine Kolitsas looks at “The Complacency Conundrum” that is currently plaguing the industry as part of our post-Covid reality. Enjoy our issue, dear readers, and enjoy your month of May.
