Year Out, Year In

With our January issue, Estiator welcomes a new year and says farewell to another gone by. For restaurants, 2019 had its challenges and its promises (the wrap-up to be covered in future issues as the analysts peel through the year’s final data points).

This month, correspondent Maria Bernardis looks forward, studying foodservice trends for 2020 and beyond, and helping our readers understand the industry’s shifting sands and how changing habits could manifest themselves in our daily operations. Throughout the issue, we see how many of those trends are applied: For sustainability, haddock is the subject of this month’s Catch of the Day; Service 101 looks at how servers are increasingly expected  to be true content specialists; hiring strategies take center stage in Managing for Success; while our Pizza column offers insights into taking on the social media critics.

With Greek and Mediterranean cuisine topping some of the trends,  Estiator’s New Arrivals, Restaurant Spotlight, and Chef Profile columns keep us focused on what is happening in that world. Check out our coast-tocoast survey of new restaurant openings, our visit to Amylos (a new high-end eatery in Astoria), and our conversation with one of the godfathers of Greek gastronomy in the U.S., Gregory Zapantis.

For our second feature, a sit-down with Dimitrios Mantzouranis (assistant F&B director at New York’s Grand Hyatt) spans several topics, the most significant of which is how management and staff connect for a common goal.

Here at the Estiator office, we are closing a year that was characterized by change. With the passing of the magazine’s founder, Peter Makrias (who is quoted quite uniquely in  “Diner Menus: Discuss,” a cartoon panel essay that originally appeared in The New York Times), Estiator has undertaken an ambitious redesign of its pages, along with a new editorial direction. We are thankful for the tremendous positive reception the changes have had among our readers, and we are excited to continue to bring you original content that offers insights helpful in operating your business.

And so, we wish you all a prosperous 2020, along with good health and happiness. We look forward to sharing 12 more great issues, beginning with the one that follows this page.
