George Trigas, onetime owner of Biloxi’s beloved Mr. Greek restaurant, is behind this new quick-service spot featuring overstuffed gyros and sandwiches on blue-and-white checkered paper, a nod to the Greek flag. The menu sticks with greatest hits, from dolmas, keftedes, and saganaki to tirokafteri, Greek salads, and spanakopita.
“There’s something about hearing the strum of the Greek bouzouki that puts you at ease and lets you know you’re in the right place,” a local critic enthused.

Beaumont, Texas

Barry Nokshiqi, who owns two Greek restaurants nearby, just opened this fast-casual spot on Beaumont’s downtown strip.
“I think Beaumont needs a new choice on Greek food,” he told a local news site. On the menu: gyros, kebabs, and salads, along with moussaka, spanakopita, and sweets like baklava.

Octopus with carrot purée, lamb chops with tzatziki, and branzino in garlic butter head up the mains, with frozen Greek yogurt and dark chocolate mousse with olive oil among the sweets.

The name of Stephanie Skiadis’ new hotspot—φῶς in Greek—means “light” or “illumination.”
The young chef became a star at Gaskins, a highly regarded new-American spot nearby that closed in November. Phōs’ menu blends Greek classics with Hudson Valley–grown ingredients; plant-based options include spanakopita and vegan gyros made with mushroom seitan and coconut tzatziki.

Santa Clara, Utah

This national franchise opened its first Utah location this spring. According to Joseph Djavairian, who owns the store, the star of the menu is a steak and chicken combo, served with two skewers, a choice of sides, salad, pita, and tzatziki on a single platter.
A splurgier lamb chop plate has also become a customer favorite, he said.
The Meráki Greek Grill concept launched in Las Vegas in 2017.
