Summer 2023 is a wrap. Vacations are over. School is in session. And families are settling back into their routines. For restaurant owners, this means that the year’s final stretch is underway, with three months left in the calendar year. It’s the time to start your holiday business planning (order those gift cards, market your party room, get social media buzzing to bring in the holiday cheer), so don’t let a minute go to waste!

In the meantime, our September issue is a mix of inspiration and stark reality. To begin, this month, Estiator’s Michael Kaminer introduces us to Bobby and Maria Bournias, the brother-sister duo behind the wildly wild and the brazenly brazen Brownstone Pancake Factory in our cover story. Read how this pair of first-generation Greek siblings has created a concept that is made for social media, leveraging their childhood food nostalgia to create a brand that is taking the world by storm!

In our New Arrivals section, Estiator continues to track new restaurants opening around the country that feature and advance Greek cuisine in America. From Baltimore to California’s coast, and from upstate New York to the sunshine state, see what’s opening and how each restaurant puts a special spin on what it is to be a Greek (eatery) in America. Anyone want to meet for a cocktail in Durham? Senior editor and restaurant whiz Constantine Kolitsas gets real n his monthly Managing for Success column, as he deals with staff that have tarnished history as the labor pool becomes increasingly shallow. And if Kolitsas talks tough in his column, in our A Cut Above section, we see how to embrace the flank with an interesting take on this cut that’s got its own tough reputation.

In our Greek-language pages, our Athens correspondent Gina Kallitsi takes us to Rhodes, which endured the summer’s worst fires. She introduces us to the culinary magic of Chefs Giorgos Troumouchis and Stavros Kougios at the elegant Noble Gourmet restaurant, situated in the Elysium Resort and Spa in the island’s Kallithea section (which translates to “Beautiful View”). In our Greek Products section, she spotlights Liba Nova Mushroom & Herb Company, a company that was born four years ago outside of the northern capital of Thessaloniki.
