1776 and Such

We hold these truths to be self-evident, that all men are created equal, that they are endowed by their Creator with certain unalienable Rights, that among these are Life, Liberty and the pursuit of Happiness.”

Two-hundred forty-six years ago, some rabble rousers in three-point hats gathered representatives from all 13 colonies and made a pretty bold declaration, thumbing their noses at the world’s greatest power and giving purpose to an armed guerrilla conflict that had started 15 months earlier. For every one of those nearly two and a half centuries, people from throughout the globe have been clamoring to enter the borders of that nation, seeking that same life, liberty and pursuit of happiness so eloquently expressed by Thomas Jefferson in the Declaration of Independence.

There is much great content in this month’s issue of Estiator, but this issue’s most important content –its most significant message– is not found in those articles but, instead, in the dozens of ads taken out by immigrants, children of immigrants, and grandchildren of immigrants, expressing their appreciation to those rabble rousers and the incredible nation they built.

It demonstrates that despite the passage of time, ours is a community of businesses and individuals who honor, respect, and appreciate the promise of the American dream; a dream built on opportunity that is a direct result of the unalienable rights upon which the United States was established.

And, rest assured, in between those beautiful, meaningful expressions of appreciation are some very good articles. In our cover story, “A Greek New Wave in the Windy City,” contributor Michael Kaminer introduces us to the individuals driving the evolution of Greek restaurants in the Midwest, while our resident restaurant guru and senior editor Constantine Kolitsas examines ways to work around fluctuating food prices in his monthly “Managing for Success” column.

Finally, summer’s here, and so are food festivals. Kolitsas turns in an informative piece on the subject with “Get Festive: A Survival Guide to Summer Festival Participation,” while this month’s “A Cut Above” looks closely at pork butt and one of summer’s staple dishes: pulled pork.
