Τhe restaurant industry (and the Greek-American restaurant industry in particular) is often a multi-generational affair. In this month’s cover story by senior writer Michael Kaminer, “Building Legacy: Industry Leaders Share Family Stories,” Estiator pays homage to those from whom the baton has passed with a loving tribute from some of the industry’s most well-known protagonists. Their stories and their sentiments are reflective of our entire readership. In fact, it’s also reflective of us here at Estiator, founded by the legendary New York-based publisher Peter Makrias and passed to his daughter Stephanie, who continues his legacy of dedication to the written word and to the restaurant community that our magazine continues to serve, for a new generation of readers.

In this issue’s Restaurant Spotlight, Kaminer sticks to the multi-generational theme with a visit to Marathi restaurant in Manhattan’s Tribeca. Opened by Andy Koutsoudakis Jr., Marathi is a new restaurant opened in the place formerly occupied by Tribeca’s Kitchen, which was shuttered when his legendary NYC restaurateur father, Andy Koutsoudakis Sr., passed from Covid. This restaurant looks to the family’s roots for a menu that is distinctly Cretan.

In his monthly installment of “Managing for Success,” our resident restaurant consultant Constantine Kolitsas digs even deeper into our collective roots by recalling the Socratic exhortation “Know thyself.” Specifically, he applies Socrates to a set of “cognitive biases” that entrepreneur Elon Musk has brought into the business conversation.

Kolitsas follows up with a Service 101 featurette that helps operators to focus on correcting a handful of common server mistakes that are often the basis of customer frustrations.

In our Greek-language section, Athens correspondent Gina Kallitsi visits Estiatorio Korali in New York City before heading back to northern Greece to introduce readers to Naoumidis, a Florina-based company that specializes in the region’s famous and fabulous peppers, in all of their varieties. In this case, says Kallitsi, the roots of the pepper made the reverse trip, arriving to Greek shores from South America following the voyages of Christopher Columbus.
