A TASTE OF THINGS TO COME
THIS MONTH’S COVER FEATURE, “Santorini’s Assyrtiko Takes on the World,” tells the story of one of the wine scene’s most exciting tastes as the celebrated Greek varietal—with its unique acidic, mineral palate—gains increasing notice here in the United States, and, indeed, around the globe.
But that’s not the only “taste” to which we want to draw your attention. In our previous issue, and in the issue you are reading, our publishing and editorial teams are giving Estiator readers more of a taste of our recent direction. You’ll find articles written specifically for us by knowledgeable industry experts, talented writers, and contributors with a passion for food and hospitality, so we can address head-on the trends, challenges, and processes a savvy restaurateur needs to know to succeed.
